Who We Work With.
Built for businesses that care how they operate.

I work with a specific kind of client. Not a specific industry. The common thread is an owner or leader who cares deeply about how their business runs and is willing to do the honest work of making it better.

The Businesses I Work With

The margins are real. The stakes are higher than people think.

I have a deep respect for the restaurant industry because I've lived it. It's one of the most operationally demanding businesses in existence. The margin for error on cost, staffing, purchasing, and workflow is genuinely thin, and most of the losses happen quietly over time in ways that are hard to see from inside the operation.

I work with independent restaurants and cafes, owner-operated multi-unit concepts, and food businesses at various stages of growth. The work typically involves food cost analysis, purchasing and vendor review, labor structure, operational workflow, and sustainable sourcing for businesses where that's part of the brand commitment.

What I don't do is tell restaurant operators how to run their kitchen. I help them build the infrastructure around it.

Honest Assessment

Who I work best with.

The clients I produce the best results for tend to share a few things.

They already know something needs to change. They might not know exactly what, but they're not waiting for a crisis to start paying attention. They're proactive about the health of their business.

They're willing to hear difficult things. Good consulting sometimes means saying that a system someone built with real effort isn't working anymore, or that a strategic assumption needs to be examined honestly. The clients who get the most from working with me are the ones who want that honesty.

They're committed to implementation. A plan only has value if it gets executed. I do everything I can to support implementation, but the businesses that see real results are the ones where leadership is genuinely committed to following through.

They value a direct relationship. When you work with Moss Theory you work with me, not a team. That means I know your business at a level of detail that's only possible through a close working relationship.
